Protein Chocolate Cake for 1

Disclaimer: This will be a short post just as long as it takes for this yummy protein cake to cook. 1 minute!

I’ve seen a few recipes for protein mug cakes floating around in the interweb but none of the ones I’ve tried where actually good. I would eat them just because it was better than not having any “cake” at all. Until this one. It truly feels like you’re eating a decadent dessert but instead you’re eating a dessert with lots of protein and that is high in fiber.

It took me a while to master the ratios for this recipe and the only thing that I may do next time is add some kind of gooey stuff (like nutella) to make it a lava cake. Hello! Did you just say my name?

I think I’ll be eating this as my post workout meal in a regular basis for a long time!

Ingredients

  • 3 Tbsp whole wheat flour (or all-purpose flour)
  • 2 Tbsp cocoa powder, natural unsweetened
  • 2 Tbsp stevia
  • 3 Tbsp unsweetened applesauce
  • 1/4 tsp baking powder
  • 1/8 tsp table salt
  • 1 scoop of chocolate protein powder (I use Gold Standard 100% Whey)
  • 3 Tbsp unsweetened vanilla almond milk
  • 1/4 tsp pure vanilla extract
Directions
In a small bowl, mix all dry ingredients well. Add wet ingredients and mix with a fork until all is mixed well.
Transfer cake batter into a 8 oz ramekin or a coffee mug. Microwave for 1 minute. Cool for a 1 minute before eating.

(note: if the cake will be transferred to a plate when cooked, then spray your ramekin with cooking spray so that it doesn’t stick. Otherwise don’t worry about it. I think it tastes better straight out of a mug)
I topped my cake with a mix of non fat greek yogurt, stevia & cinnamon. The combination is sooo good! You’ll never guess this stuff is good for you  :)

Ana, I just didn’t use the cocoa & used vanilla protein. Today I put blueberries in it. Yummy!

Also, what do you think would be a good substitute to use if someone doesn’t want all the protein?

I just made this and it was super yummy. I did do the add of Dark Chocolate Dreams to make like a molten cake like you suggested and it was really good. I think I might cook less time next time to see if the cake will be a little more gooey. Mmmm

Just made it again and I think it’s better with the regular cooking time. Definitely like the dollop of Dark Chocolate Dreams though. Mmmm pure heaven!
